How to make Egusi Soup & Bitter Leaf

Egusi with bitter leaf is a delicious Igbo soup made with melon seeds and enriched with spices and bitter leaf vegetable and served with a choice of pounded yam or Garri

 Ingredients

3 medium cups Egusi Seeds(Melon seeds)

Assorted meat

Assorted dry fish of choice 

Dried shrimp or crayfish

Red Palm Oil: 2 cooking/serving spoons

Bitter leaf

2 seasoning cubes

Pepper

Salt

 

Preparartion

Boil the assorted meat and fish with chopped onions, one seasoning cube and salt to taste.

Cook until tender and set aside for later use.

Clean the dried shrimp or crayfish.

Grind the shrimp or crayfish.

Grind the Egusi seeds until smooth

Wash the already squeezed bitter leaf

 

How to cook the soup:

Heat up palm oil for 5 minutes

Fry diced onions and the egusi in the palm oil for about 10 minutes, stirring constantly

Add water and add the cooked meat and fish

Simmer for 10 minutes

Add the ground dry shrimps(or crayfish), ground pepper and seasoning cubes.

Simmer for 15 minutes.

Add the sliced bitter leaf

Simmer for  10 minutes and the soup is ready
